Recipe: Ann’s Courgette Slice

Is there anything better than recreating one of our mum's recipes? Try this delicious courgette slice. Recipe courtesy of our photographer Bec's mum in Tazmania - thanks Ann!

2 courgettes
1 large onion
Salt and pepper
1/4 cup oil
1 cup grated cheese
1 cup self-raising flour
4 (large) – 6 (small) eggs
Optional extra: Bacon or ham – 3 rashes or however much you prefer

Pre-heat oven to gas mark 6 / 200C

Grate courgettes and cheese, chop onion and bacon and throw everything in a large bowl and give it a good mix up.

Use some of the leftover oil to grease a large ovenproof baking dish

Bake in the middle of the oven for approx 1 hour (test with a skewer to make sure the centre is cooked)

Let it cool for 10 mins or so then divide up into portions (be sure to cut around the edges to get it cleanly out of the dish).

Absolutely delicious served hot or cold.

Or portion it up into bite-sized pieces for a post-Covid dinner party celebration.
