
Mid-Week Menu – Ginger chicken satay skewers

Ginger chicken satay skewers
Makes: 4 skewers

Cooking time: 15 mins
Allergens: May contain gluten (soy sauce), peanuts and soy
Ingredients:
- 2 tbsp crunchy peanut butter
- 2 pieces stem ginger in syrup (we’d go for Opies every time)
- 1 tsp minced garlic in oil
- ½ tsp minced chilli in oil
- 1 tbsp soy sauce
- 1 lime
- 1 tbsp olive oil
- 400g chicken breast, cut into chunks
- Handful of fresh coriander leaves

Method
In a large bowl, mix together peanut butter, stem ginger in syrup, garlic, chilli, soy sauce, the juice of ½ lime and olive oil.
Add the chicken pieces and coat each piece well. Place in the fridge for 30 minutes to marinade.
Thread pieces of chicken evenly onto either wooden or metal skewers.
Grill or barbecue on a medium heat, turning frequently to ensure they don’t burn until the meat is thoroughly cooked.
Drizzle over some reserved syrup and serve with wedges of lime and scattered coriander leaves.
HLN Hint: This marinade would work well for pork, tofu or vegetables too. Don’t forget to soak the wooden skewers to stop them charring.
