Mid-Week Meal: Veggie Tacos

Cooking time: 15 minutes
Serves: 2–3 people
Ingredients
- Future Farm mince (available from Sainsbury’s)
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp mixed pepper
- Vegan cream cheese
- Soft shell tacos
- Fresh coriander
For the Mango Salsa:
- 1 ripe mango
- 1 red onion, finely diced
- Half a red pepper, diced
- Half an orange pepper, diced
- 1 large bunch of coriander
- 1 red chilli
- 1 green chilli
- Juice of 1 lime
- Salt and pepper
Method:
- Start by chopping up all the mango salsa ingredients, adding them to a bowl and mixing well to combine. Pop in the fridge until later.
- Next, grab a skillet, add a splash of oil and fry the Future Mince with the cumin, smoked paprika and pepper for 3-4 mins, or until browned (and smelling amazing!). HLN Top Tip: Add a splash of water if the pan gets too dry.
- Lightly flash-fry the taco shells, then load them up with the mango salsa and the mince and top with the cream cheese.
- Finally, sprinkle on some fresh coriander, add a squeeze of lime and ENJOY!
