Giant pigs in blanket traybake

Serves: 4

Ingredients

2 tbsp olive oil

1 x 600g Cumberland sausage ring

8 rashers streaky bacon

2 tbsp runny honey

2 carrots, roughly sliced

1 red onion, sliced into 8 wedges

1 head of broccoli, cut into florets

12 Charlotte potatoes, halved

5 bay leaves

Method

Preheat oven to 180ºC (160ºC fan) mark 4.

Unravel sausage and wrap the bacon around it at intervals, and then coil it back up.

Toss the vegetables in the olive oil in a large roasting tin (approx. 28 x 34cm) and season well. Pushing the vegetables to the sides of the tin then place the sausage in the centre and drizzle with honey.

Scatter over the bay leaves and cook for 50 mins, turning the vegetables halfway through.
