Grantley Hall support young talent by hosting a fundraising dinner with emerging chefs at Leeds City College

Five-star North Yorkshire-based Grantley Hall hotel has teamed up with Leeds City College for a fundraising dinner at Printworks Kitchen & Bar, raising £2,000 for the college.

The Ripon hotel, which has an enviable reputation as a dining destination in the North of England and beyond, is clearly committed to passing on their wealth of knowledge and expertise to the next generation. A selection of Food & Drink students from Leeds City College were lucky enough to be tutored for the day by several of Grantley Hall’s talented chefs, working alongside each other to develop the students’ skills and deliver an exceptional three-course menu for 50 guests on the evening. In attendance from Grantley Hall was the newly appointed Head Chef of Bar & Restaurant EightyEight, Samira Effa, Head Chef in Fletchers Restaurant, Craig Atchinson and Head Pastry Chef, Stefan Rose.

The fundraising dinner was led by Grantley Hall’s seasoned Executive Chef, Simon Crannage, alongside Programme Manager at Leeds City College, Fabrice Teston. The two combined forces to enhance the students’ experience, giving them the opportunity to work alongside a talented and experienced team of chefs to support their career growth, all whilst raising money for the college.

‘It was a privilege to spend the day with the students in the kitchens of Leeds City College to oversee them prepare a three-course meal for the fundraising event,’ says Simon. ‘My team and I were very impressed with the professionalism of the students, along with their thirst for knowledge, not to mention how they kept up with us for what was a very long day in the kitchen! We cooked from scratch so that the students could see first-hand the entire process and learn new skills not necessarily taught by the curriculum; making it a valuable day in both terms of learning and inspiration.

‘Grantley Hall is proud to support such important fundraising initiatives that give back to the community and encourage education in our craft as chefs. We hope to continue holding the event to further support Leeds City College and the students that will be future of our industry.’

The menu was designed by the team of Grantley Hall chefs and was cooked to perfection by the students, under the tutelage of the experts, offering a fantastic learning opportunity for the budding chefs.

The students created the first course of Cornish plaice with white crab, compressed fennel, sea vegetables and crab bisque; designed by Head Chef of Bar & Restaurant EightyEight and previous contestant on the Great British Menu, Samira Effa.

Next up was the main course designed by Head Chef in Fletchers Restaurant, Craig Atchinson: a dish that consisted of herb-fed Yorkshire chicken, onion puree, crushed peas, braised shallot, confit of the leg croquet with a poultry and truffle cream.

Last was the dessert, designed by Head Pastry Chef, Stefan Rose – who featured on Bake Off: The Professionals: Yorkshire strawberries with Valrhona Inspiration Chocolate and Earl Grey tea dessert, perfectly executed by the students.

‘Grantley Hall really brought the luxury experience to Leeds City College for a fantastic evening that was enjoyed by our students and guests alike,’ says Fabrice Teston. ‘What a treat for our catering students to work alongside Simon Crannage and his team to gain such valuable industry experience.’

The fundraising evening was sponsored by many well-known brands from across the hospitality and luxury industries, including Farmison, Delifresh, Classic Fine Foods, Valhrona, LVMH, House of Townend, Redline and Grantley Hall. All proceeds raised from have been donated to Leeds City College, which is one of the largest further education institutions in the country with more than 20,000 students and one of the biggest providers of apprenticeships regionally.
