RESTAURANT PINE LOVES: Flowering 75

Ingredients:

50ml Hepple Gin

20ml flowering blackcurrant

15ml foraged lemon verbena syrup

5ml homemade lemon geranium bitters

5ml pink grapefruit juice

Method:

  • Shake ingredients together and pour into a martini glass.

BLACKFRIARS LOVES: Hepple Cocktail

Ingredients:

50ml Hepple Gin

20ml Northumbrian Mead

20ml lemon juice

Method:

  • Shake ingredients with ice and pour into a glass over crushed ice.
  • Float Aubert and Mathieu Amy Organic Rouge over the top and garnish with Cloister Garden thyme flower

PEACE & LOAF LOVES: A Fifth of Cooler

Ingredients

45ml Hepple Gin

10ml Manzanilla Sherry Wine

20ml lemon juice

4 dashes of house elderflower bitters

Method:

  • Shake the first four ingredients together
  • Strain into an ice-filled highball
  • Top with soda water
  • Garnish with flowers from the garden and spritz with an absinthe mist

SOLSTICE LOVES: Hepple Cocktail

Ingredients:

60ml Hepple Gin

200ml Belsazar Rose

160ml white pomegranate tea

25ml Pernod Absinthe

400g raspberries

25g tarragon leaves

Method:

  • Raspberries are cooked into the batched cocktail in a water bath at 40°c for one hour. Once cooled, tarragon leaves are infused for two hours at room temperature.
  • To serve, stir down 85ml of the cocktail and strain it into a Hepple Nick & Nora glass and express lemon oils over the top of the cocktail.
