Sun-Dried Tomato and Mascarpone Rigatoni

Super easy and super simple. The perfect pasta that only takes 15 minutes to make.

INGREDIENTS

200g of dried rigatoni

2 cloves of garlic

80g of sun-dried tomatoes, roughly chopped

3 tbsp of tomato puree

2 tsp of dried chilli flakes

120g of mascarpone cheese

Parmesan to serve

 

METHOD

Start by boiling the pasta in salted boiling water according to the instructions on the packet.

In a frying pan, heat up a splash of oil over a medium heat. Once hot, add the garlic, chopped sun-dried tomatoes and chilli flakes.

Fry this off for 2-3 minutes until fragrant. Add the tomato puree and fry for a further minute.

Add the mascarpone and a large splash of pasta water. Mix well over the heat, adding a little more pasta water if the sauce looks a little thick.

Darin the rigatoni once cooked and add into the pan with the sauce. Mix well over the heat then divide between two bowls.

Finish with parmesan and a basil leaf to garnish.
