Create your own Dubai-inspired chocolate bar

INGREDIENTS

200g dark chocolate

200g milk chocolate

100g fresh kadayif

2 tablespoons tahini

1 tablespoon coconut oil

Pinch of sea salt

Optional: white chocolate and food coloring for decoration

Equipment

Chocolate bar mould (or a loaf tin)

Microwave or double boiler

Mixing bowls

Spoon or spatula

METHOD

Prepare the Kadayif:

  1. Cut the fresh kadayif into fine pieces.
  2. Toast the kadayif in a pan over low heat until golden and crispy, about 3-5 minutes. Stir frequently to avoid burning.
  3. Once toasted, transfer to a mixing bowl and set aside to cool.

Prepare the Tahini Filling:

  1. Warm the tahini slightly in the microwave for about 20 seconds until smooth and runny.
  2. Pour the tahini over the toasted kadayif. Add a pinch of sea salt and mix well to combine.

Melt the Chocolates:

  1. In a microwave-safe bowl, melt the dark and milk chocolate together in 10-second intervals, stirring between each interval until smooth.
  2. Stir in the coconut oil to give the chocolate a smooth, glossy finish.

Prepare the Moulds:

  1. If using white chocolate and food colouring, melt the white chocolate and divide it into small bowls. Add a few drops of food colouring to each bowl to create different colors.
  2. Dollop the coloured chocolate onto the base of the mould and swirl with the back of a spoon to create a marbled effect.
  3. Pour a layer of the melted dark and milk chocolate mixture over the coloured chocolate, spreading it evenly to cover the base and sides of the mold.

Assemble the Chocolate Bars:

  1. Fill each mould with the tahini and kadayif mixture, pressing down gently to ensure an even layer.
  2. Cover the filling with the remaining melted chocolate, spreading it out to ensure the filling is completely enclosed.
  3. Scrape off any excess chocolate and smooth the surface.

Set the Chocolate Bars:

  1. Place the filled moulds in the freezer for a few minutes to set the chocolate.
  2. Once set, remove the chocolate bars from the moulds.

Store and Enjoy:

  1. Wrap each chocolate bar in aluminium foil and store in the refrigerator or freezer, depending on how long you plan to keep them.
  2. Enjoy these delightful bars with a cup of coffee or as a decadent after-dinner treat.
