Asparagus pesto pasta with burrata

Serves: 4

Time: 30 minutes

INGREDIENTS

10 -12 oz pappardelle

1/2 cup reserved pasta water

1 bunch asparagus, chopped into 2″ pieces

1/4 red onion, diced

1/4 cup basil pesto

2 cloves, crushed

tbsp olive oil

1 tsp lemon zest

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes, optional

8 oz burrata, cut into pieces

Garnish with

Crushed pistachios

Microgreens

METHOD

Cook the pasta as instructed on package. Reserve 1/2 cup of the pasta water, drain and set aside.

Heat a large pan on medium heat and add in 1 tbsp of olive oil.

Add in the diced onion and saute for 3-4 minutes. Add in the crushed garlic and stir together for 1-2 minutes.

Add in the chopped asparagus with another tbsp of olive oil. Cook on medium heat for 5-7 minutes, stirring occasionally.

Add in the spices, lemon zest, pesto and 1/4 cup pasta water. Mix well then stir in the pasta, add in more of the pasta water as needed. Let it cook on a low heat for a few minutes until the sauce gets absorbed. Adjust salt if needed.

To serve, plate the pasta on a large platter or wide bowl. Top with the cut up burrata, microgreens, chopped pistachios and a drizzle of olive oil.
