Strawberry matcha honey yoghurt clusters

INGREDIENTS

1 heaping cup diced strawberries

½ teaspoon vanilla extract

¾ cup plain greek or skyr yoghurt

½ tablespoon matcha

1 tablespoon honey

1 ½ cups dark chocolate chips

¼ teaspoon coconut oiloptional but does help chocolate to melt easier

METHOD

Add matcha, vanilla, yoghurt and honey to a bowl. Mix until smooth and fold in the strawberries.

Spoon out the mixture onto a sheet pan lined with parchment paper (a plate or other flat surface also works) into 6 evenly sized clusters.

Freeze for 1-2 hours (or overnight) until hardened.

Melt together the chocolate (and coconut oil if using).

Dunk each cluster in dark chocolate. Sprinkle over the rest of the flaky salt. Freeze again for 10-15 minutes, until set. Dig in and enjoy!
