
Bank holiday burger recipe

INGREDIENTS
8 Boneless Chicken Thighs
1 Tbsp Chipotle Paste
125ml Passata
Barbecue Sauce
1 Onion
1 Lime
2 Avocados
Small Bunch of Coriander
1 Gem Lettuce
4 Brioche Buns
METHOD
Into a slow cooker, place your chicken, chipotle paste, passata, 2 tbsp of barbecue sauce, chop up your onion and add this along with a sprinkling of salt and pepper. Mix together to make sure the chicken is coated completely, then leave this to cook on the ‘Low’ heat setting for 6 hours.
Guac Time. Into a bowl, add your avocados and mix with a fork until it resembles a chunky guac. Next, chop up your coriander and add to the bowl, followed by the juice of your lime, a sprinkle of salt and pepper and mix together.
Once your chicken is done, shred it all up in the slow cooker. Lightly toast your buns and add a squeeze of barbecue sauce to the bottom bun, then add a spoonful of your chipotle chicken followed by a spoonful of guac. Add 2 leaves of lettuce and top it off with your bun. Repeat for the rest of your MOB and tuck in.
