Try the viral TikTok carrot salad
Great as a side salad, afternoon snack, or light lunch. You can serve it alongside some crispy tofu or fried rice for a more substantial meal as well.
2 medium-sized carrots, cleaned and peeled
1 tablespoon sesame oil
1 teaspoon rice wine vinegar
1 teaspoon toasted sesame seeds
½ teaspoon flaky sea salt
¼ teaspoon ground black pepper
squeeze of lime juice
Start by washing and shredding your carrots. You can leave the skin on, so long as they’re scrubbed clean.
Next, add your carrots to a large bowl alongside all of the remaining ingredients.
Toss to combine, and top with additional sesame seeds if desired. Enjoy!
