Peanut butter and chocolate energy balls
Yield: 15
INGREDIENTS
220g / about 12 medjool dates, pitted
70g / 1/2 cup pecans
2 tbsp peanut butter
2 tbsp cocoa powder
2 tbsp maple syrup
METHOD
First, blitz the pecans in a food processor for a few seconds until they are mostly fine.
Add all the remaining ingredients and blitz until the mixture is combined and starts to clump together.
Scoop a heaped teaspoon at a time and roll into a ball. Repeat until all the mixture has gone. It should make about 15 balls.
Store in the fridge in an air tight container.
