Foolproof cookies for Santa
Beverley Park's easy cookie recipe is guaranteed to be a success every time. Whip up a batch with the kids to provide extra special treats for Santa on Christmas Eve.

Baking cookies for Santa is important business. I mean he needs to keep his strength up with such a lot to do and after sampling every cookie there is his standards I would imagine are fairly high. Bake my lovely recipe, guaranteed to work every time.

Ingredients
125g butter, chopped
1 teaspoon vanilla extract
275g brown sugar
1 egg
150g plain flour
40g self-raising flour
1 teaspoon bicarbonate of soda
40g cocoa powder
200g of your favourite chopped chocolate
Baking instructions
Preheat oven to 160 fan, line three baking trays with baking paper.
Beat the butter, extract, sugar & egg with an electric mixer until smooth.
Sift flours, bicarbonate of soda and cocoa powder then slowly mix into the butter mixture.
Gently stir in the chopped chocolate.
Spoon mixture onto baking parchment and slightly flatten, evenly space as the mixture will spread slightly. Makes 24.
Bake for 12 minutes. Leave cookies on trays to cool then enjoy them all now or transfer to a container for later.
Tips
These delicious cookies will spread when cooking so don’t overload the tray.
Use the 200g of chocolate however you wish, mix the chocolate (dark, milk, white), nuts, raisins, whatever you like.
Don’t be tempted to over bake, they will firm up when cooling.
